The air is crisp and fresh, you can open the window and the fall air just flows in. The sunshine seems brighter and its warmth is welcomed on your face- you FINALLY get to break out your favorite boots and scarf. These are just a few of my favorite things about fall. Your wardrobe isn’t the only thing that changes with the leaves- it also becomes more acceptable to eat SOUP again (not that I let the summer months stop me, you just get fewer “weirdo” looks.
Soup has also been a staple in my diet, as my mom makes the BEST soup (not bragging or anything…)! I have always been amazed by the way she can take almost anything and throw it in a pot and the end result is something hot and tasty. I remember watching her as a kid, chop and dice, sprinkle and taste until she had the perfect vegetable beef, chicken noodle, ham and bean, or you name it soup. I also remember leaving for college and my first fall away from home, longing for a bowl of my mom’s soup and the comforting feeling that came with it. Lucky for me, I went home a couple weeks later and guess what was a leftover in the fridge? 😉 I ALSO remember trying to make my first soup- it definitely took more effort than I thought it would and I wondered how my mom made it look so easy?
Now, you might think that I am sounding a little soup obsessed, but trust me- if you had a bowl of my mom’s soup, you would think this story is perfectly normal! So where is this all headed? Well, I am about to share a roundup of some amazing soup recipes found around the world-wide-web, and while they all look and sound amazing, trust me when I say- nothing can beat mom. ☺
